When I was a little kid we used to have an American neighbor that used to bring us goodies she baked. One of my favorite was banana bread, something I haven't had for over 20 years now since it is not well known or common in Austria. This weekend, seeing a bunch of overripe bananas in our fruit bowl, I had the sudden urge to bake some banana bread and it tasted just as good as I remember it!
As I am a really big fan of sweets I love baking them myself. And I love trying out new recipies – especially those including chocolate and fruits. For a dinner with friends I was looking for a new delicious desert to bring as gift, and this is what I made. If you are still hesitating, if this will be the right choice for you: Everyone of our friends loved the tarte and it didn’t survive one single day. Ingredients 150 g flour 50 g grated almonds 100 g sugar 1 dash of salt 1 medium sized egg 125 g butter 1 vanilla bean 50 g white chocolate 300 ml milk 1 pack of pudding powder 250 g whipping cream 300 g blueberries powdered sugar grease and floar for the baking pan baking paper and dried seeds (f.e. sunflower seeds) for blind baking Method Put flour, almonds. 60 g sugar, salt, egg and butter in a bowl and mix it well, than knead a smooth dough. When it comes to sweets we normally go for chocolate stuff. One cake without chocolate which always pushes our buttons is the New York Cheese Cake. And: it is one of the easiest recipies you will ever find. Works out everytime – also if you are a beginner. Enjoy! Ingredients: 30 Shortbread cookies, crumbled 80 g Butter, melted 400 g Cream cheese 500 g Curd cheese (low fat) 160 g Sugar 1 Package of vanilla sugar 3 Eggs Method: For the cake bottom mix the crumbled cookies with the melted butter. Put the mixture into a springform pan. Grease the pan beforehand. Put the pan into the preheated oven (170°C), until the topping is ready. For the topping mix cream cheese, curd cheese, sugar, vanilla sugar and eggs until foamy and place the mix on the cake bottom. Bake the cake for 40 minutes at 170° C. Let it cool and take it out of the springform. Tipp: You can serve the Cake with stewed fruit, for example cherries. But if you are purist, as we are, you will cherish the cake without any additional topping.
Apple fritters, or “gebackene Apfelspalten” as they are called in German, are a another fantastic winter season comfort food, that’s quickly made and delicous. Although they are so simple to make there are many different versions of serving them, here’s my variation of the basic recipe and check the tips for some alternatives: Ingredients 2 apples 1 lemon 1 tbs rum 100g flour 100ml wine 1 egg 1 pinch of salt oil confectioners sugar and cinnamon for garnishing Method Peel and seed apples, cutting them in roughly 1 cm thick slices. Sprinkle the slices with lemon juice, rum and sugar and let them rest a little while preparing the dough. For the dough mix flour, wine, a table spoon of oil, egg yolk and a pinch of salt, until smooth. Whisk the egg white with some sugar untill it stiffens and gently fold it into the dough. In a pan heat some oil. Coat the apple slices in batter and fry for 2 to 3 minutes, until evenly golden brown. Drain on paper towels and dust with confectioners’ sugar and cinnamon. As the Easter Holidays are approaching I was looking for new recipes to surprise my friends with some sweet edible Easter presents. What I came up with are really delicious, yet easy to make carrot cupcakes. A treat not only limited to Easter. Ingredients 3 eggs (size M) 200 g carrots 190 g almond paste 60 g sugar Dash of salt 1 tablespoon flour 1 teaspoon baking powder 1 teaspoon grinded cinnamon 180 g grinded hazel nuts 2 tablespoons powdered sugar 150 g cream cheese (full fat) 1 tablespoon crème fraîche Orange food colouring Makes 12 cupcakes Method Preheat the oven to 180° Celsius. Separate the egg yolk from the egg white and wash, peel and grate the carrots. Take 40 g of the almond paste and tear it in small pieces, add the egg yolks and 2 tablespoons of hot water and mix it until it gets creamy. Put the egg white, sugar and salt into a bowl and mix until it gets stiff. Combine flour, baking powder, cinnamon and hazelnuts in another bowl. Returning from the USA we not only brought back many unforgettable memories and pictures but also some delicious recipes. We’ll start with a quick and easy to make caramel apple bar, which is the American take on an English apple crumble or a Austrian Apfel-Streuselkuchen. Let’s go: Ingredients 1 cup brown sugar 1/2 cup butter or margarine 1 3/4 cups all-purpose flour 1 1/2 cups oats 1 teaspoon salt 1/2 teaspoon baking soda 4 cups thinly sliced and peeled apples (that’s roughly 3 medium apples) 3 tablespoons all-purpose flour 350 ml caramel 1 teaspoon cinnamon Serves: roughly 36 bars Method Pre-heat the oven to 200 degrees Celsius. Mix the brown sugar and the butter in a large bowl. Stir in the flour, the oats, salt, cinnamon and baking soda. Save 2 cups of the mixture and put the remaining mixture in an greased rectangular pan. Toss the sliced apples in the 3 tablespoons of flour and spread over mixture in pan. In our house we have a clear separation: Cliff’s the main cook and I’m responsible for sweet dishes, cookies and cakes. As we both love sweets I’m pretty often in the kitchen trying new stuff. During our last holiday I tried these yoghurt cupcakes with tangerines, which are really juicy, sweet and also easy to make. Ingredients 8 tangerines 200 g butter 730 g sugar 2 eggs 250 ml plain yoghurt 300 g flour 1 1/2 teaspoons baking powder Makes 12 cupcakes Method Preheat the oven to 180 °C. Wash 2 of the tangerines with hot water, dry them, grind the peel and pour out the juice. Put both in a bowl. Add 330 g of sugar and the eggs and stir everything properly. Add the yoghurt, baking powder and flour. Put the dough in small cupcake forms or baking forms. Fill the forms up to 1 cm under the top. Bake the cupcakes for about 45 to 50 minutes, until the tops are golden and the middle of the cakes is soft. Take them out and let them cool for five minutes. If you like apples in your dessert you will definitely go for this recipe. We found it when we were planning our Christmas dinner. The veiled farmer’s girl is known in Austria or Germany as Verhülltes or Verschleiertes Bauernmädchen, because the topping looks like a veil, the bread and apple symbolize the farmer’s girl. Anyway, it’s easy to prepare and tastes delicious. Ingredients 1 1/2 cups crumbs of white bread or brioche 3 teaspoons powdered sugar 2 teaspoons cinnamon / powdered 2 teaspoons butter 300 ml whipped cream 800 g apples 1 cinnamon stick 2 cloves Lemon zest Sugar Serves 4 Method Peel the apples and cut them into quarters, remove the core. Cook them in water with some sugar, the cinnamon stick, cloves and lemon zest until the apples are soft. Remove the spices and purée the apples with an immersion blender. The result should be a creamy but not too liquid apple sauce, so ideally remove all the liquid and add back as needed. Let it cool down.
